@PensioNien well then I shall give you a follow. We are primarily vegetarian at the moment and not full vegan, but I'm always interested in alternatives, especially in light of the wicked expensive price of eggs at the moment and it being winter so not so easy to source them locally.

Like you, I'm not vegan, but I respect veganism. I'm just allergic to so much of it. I will say that being curious about vegan food has opened up such interesting opportunities. Who knew that Violife vegan Feta cheese would be creamier and tastier than traditional sheep's milk feta?

@kimlockhartga And you can use lots of things but whether they give the desired result is a whole other thing! Vegan cooking has come a very long way but substitutions are not always successful. I'd highly recommend following a vegan recipe for best results. @CoachMark

@kimlockhartga I love cashews but I've never seen them used as an egg substitute in vegan cooking. They more often get used as a dairy substitute, particularly for vegan cheesemaking, in my experience. I'm not vegan, I'm just into food and cooking and also cook for vegan friends. @CoachMark

@CoachMark chickpea water (aquafaba) can be used as an egg white substitute for making meringue (and it works well) but I don't think it can be used as a substitute for eggs otherwise. Ground flaxseed tends to be the vegan substitute for whole eggs for most baking.

@kimlockhartga I think you can use the liquid from chikpeas too to a certain degree (I forget what they call it, but I think it can even fluff up like egg whites when beaten)

Boy, you folks weren't kidding about the egg shortage due to #BirdFlu. The shelves were bare at my store. I'd never seen that before. Reminds me of the height of the Pandemic.
Also, I told one of you wrong about an egg substitute for recipes: it's flaxmeal + water, not flaxseed + water. I apologize for that.

Dehydrated Food Update — More Info
Two things:
1. The precooked sweet potato chips retained their crunch better than the raw slices. After the chips had cooled for a couple of hours, the precooked chips were definitely crunchier.
2. Even though I rubbed oil over the trays, the banana chips stuck in places. So if you try this, be sure to oil every little spot; those banana chips are sticky. (No similar problem with the sweet potato chips.)
