I write and think about culture (for fun and to pay my rent). My obsessive interest is people and how we work, individually and collectively, which makes me interested in most things, with a particularly keen interest in cogsci and psychology (I grew up around medical science). I studied painting and drawing at uni and I used to play in bands and work in the music industry. Maybe I'll switch to using my real name here eventually.

@kimlockhartga And you can use lots of things but whether they give the desired result is a whole other thing! Vegan cooking has come a very long way but substitutions are not always successful. I'd highly recommend following a vegan recipe for best results. @CoachMark

@kimlockhartga I love cashews but I've never seen them used as an egg substitute in vegan cooking. They more often get used as a dairy substitute, particularly for vegan cheesemaking, in my experience. I'm not vegan, I'm just into food and cooking and also cook for vegan friends. @CoachMark

@CoachMark chickpea water (aquafaba) can be used as an egg white substitute for making meringue (and it works well) but I don't think it can be used as a substitute for eggs otherwise. Ground flaxseed tends to be the vegan substitute for whole eggs for most baking.
