Unsure of your specifics, but with most of the Docker builds you can mount the volume outside of the container, into the actual filesystem, which you can then grep log files you write into with scripts...
...you can also rebuild the container using Dockerfile to suit your purpose.
An act of wizardly I have successfully avoided so far.

In response to this post@n_dimension @alexs @jenstec @armerpunkt I've done a bit of Docker... but it kinda irks me to have an entire OS encapsulated like that with other people's code, I always feel like it's a recipe for some kind of security hole.
